Not to be dramatic here.. but honestly, this is the best salad I've ever had.
First off... let's talk kale. Kale is king of health. Kale is among the most nutrient dense foods on the planet. Adding kale to your diet is an easy way to get some much needed vitamins into your system.
I recently fell in love with a kale salad that I ordered at a restaurant and was on a mission to recreate something like it. Below is my recipe for what I believe is the best kale salad ever.
YOU WILL NEED
- RED SEEDLESS GRAPES
- TOASTED PINE NUTS
- GOAT CHEESE
- TRADER JOES CHAMPAGNE VINAIGERETTE (OR SOMETHING LIKE IT)
Start off by massaging your kale. This step is SO IMPORTANT. I know what you're thinking... massaging kale? Why would I give a bunch of leafy greens a massage? If you massage your kale for about 5 minutes or so it will 1. instantly make the kale softer and easier to eat and 2. bring out the sweetness in the kale for better taste.
Then it's time to start adding in the ingredients!
I don't have exact measurements on how much of this or that because.. well um it's a salad and I'm sure you can figure it out :)
Add in the pine nuts, cut the grape into halves, and crumble how ever much goat cheese you'd like.
Now it's time for the dressing!
The salad that this was inspired by has a vinaigrette/citrus taste to it. I found this champagne vinaigrette dressing at Trader Joes and thought it would be so good with it, I was right!
Add some lemon for a taste of citrus and voila! You have yourself the best kale salad ever.
