The Dark & Stormy is a favorite of mine for these winter nights in LA. You kind of feel like you're in the tropics drinking this cocktail, with the fresh lime wedge and dark rum floater, but the rum is so warming and perfect for a chilly night. Best of both worlds.
Here is the recipe I pulled from the Food Network. I love using the dark rum as a floater, which is different from most classic recipes.
Dark & Stormy
Ice Cubes (I used an ice cube tray that makes sphere cubes)
1 - 2 juicy limes, for 1 ounce of liquid and a lime wedge for garnish
1 ounce Mount Gay Barbados Rum
6 ounces ginger beer
1/2 ounce Whaler dark rum
Fill your glass with ice cubes. I used an ice cube maker that makes beautiful sphere cubes. Link here. Add your lime juice and Mount Gay rum. Pour in the ginger beer and slightly mix. The dark rum floater can be placed slowly on the top, or the Food Network suggests pouring it over a spoon to get that stacked coloring. Slice the left over lime into wheels and garnish! Enjoy.
